Trillium
An immersive and expressive restaurant interior for Chef Glynn Purnell and Phil Innes
Trillium is a love letter to modern British dining, shaped by the quiet drama of the woodland edge. The concept draws from the trillium flower itself, a symbol of folklore and renewal, rooted in the wild yet effortlessly elegant. That duality inspired a space that feels warm, atmospheric and alive, designed for seasonal sharing plates and low key celebration.
Inside, watercolour hues of merlot, plum and forest green wash softly across reclaimed timber, herringbone flooring and an illuminated wall of wine. Cascading greenery, dappled light and expressive neon create a rhythm that feels both poetic and grounded, a balance of romance and raw earthiness. A note wall filled with tasting cards, sketches and fragments of poetry adds a sense of memory and story, as though the restaurant is collecting its own folklore over time.
Floor to ceiling glazing opens out onto a lush planted terrace, where raised beds and soft lighting frame relaxed outdoor dining from daytime to dusk. Trillium is imagined as a sensory poem, a place where thoughtful food, organic materials and refined hospitality come together in a space that feels rooted, soulful and quietly magical.

Trillium showcases FiFi Interiors’ approach to hospitality design, blending organic materials, layered lighting and contemporary British style. The restaurant interior combines earthy textures with refined detailing, creating a space that feels both welcoming and visually striking. Every element, from the timber cladding to the sculptural planting, has been designed to support a warm and memorable dining experience.
As a restaurant design studio specialising in immersive, story led interiors, FiFi Interiors crafted Trillium to balance atmosphere and function. The layout, lighting and material choices were shaped to complement the menu’s focus on seasonal sharing plates and modern British flavours. The result is an elegant yet grounded dining environment that enhances both service flow and guest experience.
Located in Birmingham, Trillium adds a distinctive new voice to the city’s restaurant scene. The design celebrates contemporary British craftsmanship, rich natural palettes and the beauty of organic forms. This project continues FiFi Interiors’ commitment to creating hospitality spaces that feel soulful, expressive and rooted in place.
